Grades of Sake :
- JUNMAI – Means “pure sake” made only from sake-rice, water & koji without adding sugar or alcohol. The rice is polished down to at least 70%.
- JUNMAI GINJYO – Brewed with labor-intensive steps, using highly polished rice (at least 60%) and is fermented at cooler temperatures for a longer period with special yeast.
- JUNMAI DAI – GINJYO – Best of the best Brewed with very highly polished rice (at least 50%). Brewed using more intensive methods to bring out its best qualities. Master crafted and complex sake.
